What each is for

Fine grain dissolves in a few seconds. It's for everyday cooking: pasta water, a vinaigrette, a fish seasoned before lemon juice is added. It's also the only one of the two that works in a ceviche, where the salt needs to penetrate the flesh before the acid.

Coarse grain stays on the surface and crunches under the tooth. It goes on a rib of beef, in a grinder, on a salted butter caramel at serving time. It comes in a 600 g format: it's the one that goes fastest once you get used to it.

Maras salt comes from the terraced salt pans of the Urubamba Valley, at 3,300 meters, exploited by the families of Maras since Inca times. Its pink hue comes from the minerals in the spring, not from an additive. We told the story here.
