This coarse pink Maras salt from Peru comes in a 600 g bag. The larger size is practical for refilling a compatible salt grinder and regularly preparing grilled dishes or roasted vegetables.
When to use it
Grilling and barbecue, beef ribs, whole fish in a salt crust, roasted vegetables. It can also go into a grinder, if you prefer to grind it fresh before serving.
The Maras salt mines
At an altitude of 3,300 meters, in the Sacred Valley of the Incas, a saline underground spring feeds about 3,000 ponds carved into the mountainside. The water evaporates in the sun, the salt deposits, and the families of Maras harvest it with shovels as they have done since pre-Inca times. Each pond belongs to a family from the village.
This is not sea salt: it comes from a fossil aquifer, which gives it its pink color and a less biting taste.
