Pink Maras salt combined with a smoke flavour. The smoky taste is present but subtle: it gives the taste of wood-fired cooking without overpowering the dish.
When to use it
Red meat, pork, lamb, chicken. Baked potatoes, asparagus, eggplant, mushrooms. Salmon, tuna, octopus. And a pinch on butter or dark chocolate, if you want to see what it tastes like.
The Maras salt pans
At an altitude of 3,300 meters, in the Sacred Valley of the Incas, a subterranean saltwater spring feeds approximately 3,000 ponds dug into the mountainside. The water evaporates in the sun, the salt settles, and the families of Maras harvest it with shovels as they have done since pre-Incan times. Each pond belongs to a family in the village.
This is not sea salt: it comes from a fossil aquifer, which gives it its pinkish color and a less biting taste.
