The Maras salt pans
At an altitude of 3,300 meters, in the Sacred Valley of the Incas, a salty underground spring feeds some 3,000 pools carved into the mountainside. The water evaporates in the sun, the salt deposits, and the families of Maras harvest it with shovels as they have done since pre-Incan times. Each pool belongs to a family in the village.
It is not sea salt: it comes from a fossil aquifer, which gives it its pink color and a less biting taste.
