Black maca is the rarest of the three maca colors. It grows on the Junín altiplano, between 4,000 and 4,400 meters above sea level, where almost nothing else grows. The roots are harvested by hand, sun-dried for several weeks using the Andean method, and then ground into a fine powder.
This is gelatinized maca: the dried root is processed to remove starch, making it more digestible and easier to dilute. The taste is clear, malty, slightly caramelized, with a hint of hazelnut.
How to use it
One teaspoon in a smoothie, porridge, yogurt, or pancake batter. The powder pairs well with banana, cocoa, and peanut butter. Do not cook it: add it at the end of preparation.
